Rashi says "I don't know", and R Akiva Eiger cites more than 40 places where Rashi (and Rashbam) say "I don't know". Why does R Akiva Eiger do that? Is there something that connects all those citations? Did R Eiger want us to notice Rashi's humility?

I think it is simply a matter of "l'Hagdil Torah ul'Ha'adirah." In a similar vein, Rav Chayim Kanievski shlit'a lists Tana'im and Amora'im who rarely are mentioned in Shas and cites rare Midrashim.
