Dear Jeff,
The Gemara requires for Get a permanent writing which means permanent ink and stable paper or surface. Any language should be OK, but the Minhag is to allow only Ashuris lettering and only Aramis language (Shulchan Aruch Even HaEzer 126:1).
Parchment is not required. But concerning ink, the Minhag is to use only D'yo (ink for Tefilin, etc.) (125:2 in the Rama).
So normally a Sofer Stam writes with D'yo with a quill on thick paper.
