Both the Mitzva of Lulav and Suka exist for 7 days.
Lulav Shiv'ah means that all 7 days there is a Mitzva of Lulav. After taking it once a day the obligation is finished, so only once a day a Bracha is made.
Similarly Suka Shiv'ah means that all 7 days there is the Mitzva of Suka. But here that means that actions that require Suka must be done in the Suka all day, so every time the Suka is used a Bracha is made if there is a Hefsek
