Why did Yaakov ask that his wages be these kinds of animals?
Tosfos ha'Shalem (to 30:32 (5)): He saw with Ru'ach ha'Kodesh that such animals represented the kingdoms that would subjugate Yisrael (Zecharyah 6:3,6), and he wanted that [Yisrael] should be able to conquer them.
What is "v'Ansah Bi Tzidkasi"?
Tosfos ha'Shalem (1, citing R. Yosef Karo): Whenever Aniyah is followed by the prefix "Beis," it refers to testimony.

"Al Tis'halel b'Yom Machar" (Mishlei 27:1) implies that one may aggrandize himself that [now] he fears Hashem (e.g. Yirmeyah 9:23). Some Tzadikim did so, e.g. Ovadyah (Melachim I 18:12). Perhaps "Yehalelcha Zar v'Lo Ficha" (Mishlei 27:2) does not apply to Yir'as Shamayim. (PF)
QUESTIONS ON RASHI
Rashi writes: "'My righteousness shall answer...' - "If you suspect that I have taken anything from your [portion]... you will find in my flock only speckled and splotched animals." Why does Rashi explain this way?
Gur Aryeh: The word "Anesah" is derived from Aniyah, answering a question. Yaakov was saying, 'If you suspect me, and I will need to produce proof, [this will be your answer].'
Rashi writes: "My righteousness will come (Savo), [and testify] about my wages...." Why doesn't Rashi explain simply, 'When you, Lavan, come [to view] my wages'?
Gur Aryeh: The Pasuk writes, "Ki Savo Al Sechari Lefanecha." If Savo is addressing Lavan, in second person, the word Lefanecha would be redundant (i.e. 'when you come to view my wages before you'). Rather, 'Savo' is in third person - 'It will come [to testify] before you, about my wages.'
Rashi writes: "... You will find in my flock only speckled and splotched animals." Why does Rashi add this?
Gur Aryeh: Rashi now explains the content of the 'testimony' (see 30:33:152.2:1), namely that only speckled and splotched animals will be found in Yaakov's flock.
Rashi writes: "It resides by me through thievery." Why does Rashi add this?
Gur Aryeh: Rashi is explaining the conclusion of the verse, "Ganuv Hu Iti." The added word Iti (with me) means, 'It has been stolen from you, and it is though said theft that it resides by me.'
