I believe I remember reading in the Moreh Nevuchim that the Rambam states that the event re Jacob and the angel was a dream. If that is the case, does the Rambam assume that Jacob was not actually injured?

This view of the Rambam is strongly opposed by the other authorities. The question you ask is one of their questions (see Ramban).

There is much controversy over many of the views expressed by the Rambam in Moreh Nevuchim. There are those who say that the views expressed are a suggestion to appease those who strayed from belief due to their opposition to the mystics. I have seen suggested that according to this view Yakov's injury was phsychosomatic. However, it seems we do not have a full understanding of the Rambam's intention.
