On the top of of amud we see that r'Ami says "priti ain kan, naska ain kan".and the gemora says this only after the "Amsa's" price went up.
But even if her price didn't go up it shouldnt make a difference, so why does the gomora say this only after her price went up and then r'Ami say this??

I would say that your assumption is correct. Had the question been asked before the price went up they would have been told that the Mashkon is non-binding.
The Gemora is relating an incident that occurred. In normal cases with no point of contention, there would be no reason for anyone to change their mind later on. In this case where the price changed, the seller was unwilling to part with his maid for the lower price, thus the issue was brought to R. Ami. As you mention, he would have issued the same ruling in any event.
