It is quoted b'shem paneiach razah that since the time of the churban the taste left the meat and went into the bone (i believe in parshas bo) - would you be able to provide the source in chazal for that specific idea? Thank you so much!

The Kollel replies:

I could not find anyone before the Pane'ach Raza who says that the taste went into the bone. Chazal (Sotah 48a) say that the taste of fruit was lost after the Churban but nobody mentions meat. The Ein Eliyahu on the Ein Yakov quotes such a Midrash and so do the Panim Yafos and Ben Yehoyada but there does not seem to be a source for it.

However, I could suggest a rather unusual source. The Gemara in Ta'anis says that one who eats meat on Erev Tish'ah b'Av has sinned and it is said of him, "their sins were on their bones." Literally, this means that their sins stay on their bones even after the body decays (Maharsha) but we could also posit that eating the meat gave satisfaction to the bones in accordance with this Midrash, and therefore the bones have to atone for the sin.
