The gemoro brings a Raye that reb chiya outlived rebbi, because he visited him when he was sick.
How does that prove who died 1st. The gemoro on omud aleph also said that rebbis 2 sons both predeceased him even though they also visited him during his sickness?

Yosef and Shimon are Rebbi's assistants. Nowhere does it say that they are his sons. They were not present in this Ma'aseh.

You are quite right, I made a mistake I thought this shimon was the same shimon, the son that rebbi called a chochom.
However you do see in the gemoro that these 2 people were fit and healthy enough to have been expected to be ready to deal with rebbis kevurah. This is at the time that rebbi was already on his deathbed. And yet still rebbi outlived them. So the same can be said about reb chiya?

The Gemara says that since Rebbi Chiya visited Rebbi when he was sick, Rebbi died first. It seems that the Gemara obviously relies on this strong assumption. Your question (concerning the two people) does not (in my opinion) change the Gemara's assumption.
