Rashi (96b, DH v'Rebbi Yosi) explains that if she writes that she sold the properties in order to collect her Kesubah, then she will not be able any more to receive the Mezonos from Meshubadim because the Mishnah (Gitin 48b) states that one cannot collect for food for the widow from Meshubadim. Therefore, it is better if she writes "Stam" and does not specify what she is selling for, so that later on she can say that she sold already to collect her food, and that now she is selling to collect her Kesubah, so the Beis Din will be able to give her Kesubah from Meshubadim.
