I believe that the Hebrew chart regarding "gidin" that will harden is incorrect. My understanding is that after Rabbi Yochanan retracted, his position would be that we follow the end and therefore just like the skin is not "metamei" similarly one cannot be counted on it to fulfill his obligation for the Korban Pesach.
