Concerning the Beraisa'schoice of animals for professions - it seems that the Beraisa is simply matching the animals' abilities to the jobs. The lion's strength could be used for carrying, the fox's cleverness to run a grocery store, and the swiftness and sturdiness of a deer to harvest and dry figs over a large area.
