Rashi suggests that the example of R"H had to be used, since in the time of Lechem HaPanim there was no Yom Tom Sheini shel Galuyot.
if rosh hashana was 2 days (Thursday & friday) then the following shabbos would be yom kippur so that in that case the lechem haponim would actually be eaten on the 12th day????
Rashi in Menachos (100b, DH "Shnei") asks your question, and answers that by Kodshim the night follows the day, as opposed to most other Halachos where the day follows the night. Motzei Shabbos is therefore considered the eleventh day. (See Tosfos ibid. who suggests a different answer.)
