How do you learn out from the text that it is the Yom Kippur of Yovel and not any other Yom Kippur?

The Rashba says that there is indeed an argument whether or not this Gemara is solely talking about the Yom Kipur of Yovel. The Rashba argues strongly that the Gemara is talking about the Yom Kipur of Yovel. This is because the Gemara's explanation that the Shemoneh Esrei of Rosh Hashanah and Yom Kipur have many Berachos only makes sense if we are talking about the Yom Kipur of Yovel, which has the same number of Berachos as that of Rosh Hashanah (nine). A regular Yom Kipur Shemoneh Esrei only has seven.
