The gemoro proves lemaskono that rebbi gave edus to bar kaporo and reb chiya about shitas reb shimon about issur kolel or issur bas achas.
Then the gemoro asks, how can we say a zor is chayav for doing avoda on shabbos, because reb yosi holds havoro is only a lav. Not a chatos.
But the gemoro already proved that rebbi was not discussing shitas reb yosi (otherwise bar kaporo would be lying) so maybe reb shimon holds havoro lechalek yotzos and your chayav chatos, why should we say like reb yosi lelav yotzos?

If I understand you correctly, I think your question is a result of a slight misunderstanding. You are correct that the Gemara proved that we need to say that Rebbi is going with Rebbi Shimon, but the Beraisa to which the Gemara refers still mentions Rebbi Yosi as well, and says in his name that a Zar who did an Avodah on Shabbos is Chayav to bring a Korban Chatas for the Chilul Shabbos he commited. So we need to explain this Beraisa according to Rebbi Yosi himself, and if we say the Beraisa is talking about Haktarah, Rebbi Yosi holds that he does not need to bring a Chatas for lighting a fire on Shabbos.
