On daf lamed amud aleph there is a mashal from R' Yochanan in the name of R' Shimon ben Yochai to help explain passuk 61:8 in Yeshai. I am not clear what the mashal adds to the explanation of the passuk - it seems the mashal of the human king is not exactly parallel.

The Maharsha explains the Gemara beautifully in a way that I think will solve your problem.
He explains that the Gemara says specifically "Sonei Gezel b'Olah" because, as opposed to all other Korbanos where one is also stealing from the owner who receives part of the Korban, an Olah belongs to Hash-m alone (as the Maharsha extrapolates from Rashi).
Consequently, the objective of the Mashal is to teach us that just as there where the only reason for the king to pay the tax (which goes into his own pocket) is to teach the people to pay the tax, so, too, here, where the animal belongs to Hash-m anyway, the only reason why He rejects it is to teach us to reject whatever is stolen.
