Please clarify how the value of the fruit is assessed in order to redeem it

If you are asking what the Halachah is nowadays, the Shulchan Aruch (Y.D. 294:6) rules that one does not have to redeem the true value of Neta Reva'i nowadays, and can redeem a large amount of Neta Reva'i with a Perutah (worth a few cents). b'Zman ha'Bayis, the Halachah of redeeming Neta Reva'i was the same as redeeming Ma'aser Sheni (see Rambam Hilchos Ma'aser 9:2). However, the value was not the same as other simiilar fruit but slightly less, as it could not be eaten as freely as Chulin (see Rambam Hilchos Ma'aser 4:4 and Derech Emunah ibid. note 28).
