Why does Rashi on Amud Aleph find it necessary to tell me that "Nimtziu" is "Kay Aavdu", and even more so, what is Rashi telling me in "Hechzirum HaGanavim" is "Kai ANignivu"? I noticed that the mishna switched the order of listing the cases (in the Reisha nignivu was first and in the seifa nimtziu is first) but still, what is rashi adding??

There is one simple answer: the text of "ha'Ganavim" was not really in Rashi's Gemara, but was inserted by others. I am not saying this simply because it answers a very good question, but also because Rashi in Bava Metzia (58a) where this exact Beraisa is quoted makes the exact comments, without the word "ha'Ganavim." If you accept this answer, then Rashi had to explain that the Beraisa was indeed relating to the previous comments. One reason for this would be that the statements are out of order ("Nimtzi'u O she'Hichzirum") in relation to how they were originally stated ("v'Nignivu O she'Avdu").
