The Kollel replies:

The Tiferes Yisrael explains that 'Kol ha'Basar' incorporates the flesh of animals, beasts and birds. It seems obvious that the Tana uses the word 'Kol' because it is shorter, and as we learned at the beginning of Pesachim, that is the correct way to teach and certainly is the way of the Mishnah. Neither is there anything to query, so the Gemara accepts it.

Sometimes it is less obvious what 'Kol' includes, so the Gemara asks 'Tana la'Asuyei Mai?' (such as the Gemara in Erchin).

Sometimes there is a problem with 'Kol', so the Gemara queries it (as it does in Kidushin). In Chulin, the Gemara had nothing to comment, as I explained.
