I learn the daf regularly and it would be very helpful if I could get a chart which lists all the korbanot by name and who gives them, when are they brought, which quantities and any other pertinent details. It would help in understanding Zevachim.

To really get a picture of who what and where, you should get a copy of Avodas ha'Korbanos - a truly excellent work (in either Hebrew or English) that summarizes ALL of the points you mentioned with dozens of extremely clear and well-annotated charts.
The Sefer (written by Rabbi Lewenstein of the Johannesburg Cheder) can be purchased from the Kollel for $32 (or 68nis, in Israel), which includes shipping.
