(1) This refers to an animal from the age of eight days old until a full year old ("mi'Sha'ah l'Sha'ah"; RAMBAM, Hilchos Ma'aseh ha'Korbanos 1:13). However, l'Chatchilah one should bring only an animal that is at least 30 days old, except in the case of a Bechor and a Pesach (ibid. 1:12).
(2) A cow is brought until it has reached the age of three full years. A lamb or goat is brought until it has reached two full years. An animal older than these ages is considered a "Zaken" (old) and may not be brought as a Korban (ibid. 1:11).
(3) A one year-old cow is called an "Egel" (calf) in the Torah, while an older one is called a "Par." A one year-old sheep is called a "Keves" (lamb) in the Torah, while an older one is called an "Ayil" (ram). A one year-old goat is called a "Se'ir Izim" (kid) in the Torah, while an older one is called a "Se'ir" (ibid. 1:14).
(4) The exceptions to this are the Se'ir Chatas of a Nasi, the Par of a Kohen Mashi'ach, and the Par of the Kohen Gadol on Yom Kipur, which are all males.
(5) The exceptions to this are the Par of a Kohen Mashi'ach and the Par of the Kohen Gadol on Yom Kipur, which must be in their second year or older (see above, footnote #3).
(6) The exceptions to this are the Chatas of a Nasi and the Chatas brought by someone who accidentally served Avodah Zarah, both of which are a male Se'ir, and the Chatas of a Kohen Mashi'ach (who ruled in error and acted upon his ruling) and of the Kohen Gadol on Yom Kipur, both of which are a Par.
(7) The exceptions to this are the Asham offerings of a Nazir and a Metzora, which are both one year-old lambs.
(8) A two year-old animal may also be brought as a Bechor, but l'Chatchilah one should bring the Bechor within a year of its birth (Bechoros 26b).
(9) A two year-old animal may also be brought as Ma'aser Behemah, but l'Chatchilah one separates Ma'aser Behemah from all of the animals born in one's flock three times a year (Bechoros 57b), and immediately upon separating them, at the first festival that follows, one is obligated to bring them to the Beis ha'Mikdash and offer them there (Rosh Hashanah 6a).
