 (1) If it is considered the beginning of the harvest of the entire field, then when a row that passes through the middle of the field is harvested, it does not separate the field into two with regard to Pe'ah. If it is not considered the beginning of the harvest of the entire field, then it does separate the field into two with regard to Pe'ah. Similarly, if it is not considered a proper harvest, it is permitted to perform such a harvest before the harvesting of the Omer (see, however, footnote #2).
(2) Even if the produce reached its full size, and one harvests it in order to store it and to eat it at a later time, it still is not considered the beginning of a proper harvest (RASHI). (However, it is obvious that such a harvest is prohibited before the harvesting of the Omer, because it is nevertheless considered a harvest. It is just not considered to be the beginning of the harvest of the *entire field*.) We may deduce that Rebbi Shimon also holds that harvesting produce that has reached its full size for the sake of storage is not considered the beginning of the harvest of the field based on what TOSFOS writes (DH Ela, in his third answer).
