Chicken and Meat from a Cow or Lamb look completely different raw and cooked. So how is it that the Rabbi's state that they resemble each other? An egg is parve it comes from a chicken would not the chicken be parve? A chicken can never be boiled in its mother's milk so it to should be considered parve. A "tuna steak" would be considered to look more like a piece of meat than a piece of chicken, but I can serve that same tuna steak in a cream sauce. How is it possible for the rabbis to consider the public to be so inept to consider that chicken could resemble a piece of cow?

The Rabbis decided that, in their minds, people associate chicken with meat more than they associate seafood with meat. Perhaps chicken was more popular than seafood.
